Ingredients

  • avocado 1 avocado, cut into small chunks
  • burrito-size tortillas 8 large burrito-size flour tortillas (whole wheat is fine)
  • chicken breasts 2 large chicken breasts, diced
  • cooked rice 1 1/2 cup cooked rice
  • cumin 1/4 teaspoon cumin
  • garlic powder 1/2 teaspoon garlic powder
  • lime juice 1 tablespoon lime juice
  • onion powder 1/2 onion powder
  • plain greek yogurt 3/4 cup plain Greek yogurt
  • salt and pepper Salt and pepper
  • shredded cheese 1 cup shredded cheese (any flavor)

How to make it

  1. Season chicken with salt and pepper. Cook chicken in coconut oil until no longer pink.
  2. Mix yogurt and mashed avocado together with onion powder, cumin, lime juice, and garlic powder.
  3. Combine with chicken, rice, and avocado mixture.
  4. Place into the center of a tortilla and top with cheese.Fold tortilla and place seam down on baking sheet.
  5. Bake at 400 degrees for about 20 minutes, or until tortillas start to brown.
