  • cornstarch 2 teaspoons cornstarch
  • fresh mint leaves 2 tablespoons fresh mint leaves, thinly sliced
  • honey 1 tablespoon honey
  • jalapeno peppers 2 jalapeƱo peppers, thinly sliced
  • red bell pepper 1 red bell pepper, cut into 3/4-inch pieces
  • scallions 2 scallions, finely chopped
  • sesame seeds 2 teaspoons lightly toasted sesame seeds (optional)
  • skinless boneless chicken thighs 1 lb boneless, skinless chicken thighs
  • soy sauce 1 tablespoon soy sauce
  • vegetable oil 1-1/2 tablespoons vegetable oil
