Baked Peanut Butter Cup Mini Donuts

  • baking powder 1 teaspoon baking powder
  • butter 3 tablespoons butter, melted
  • buttermilk 1/2 cup buttermilk
  • egg 1 egg
  • flour 1 cups flour
  • granulated sugar 1/2 cup granulated sugar
  • half & half 1/3 cup half-n-half
  • marshmallow cream 1/4 cup marshmallow cream
  • peanut butter 1/2 cup peanut butter
  • peanut butter cups 3 0.75 oz snack sized peanut butter cups, chopped
  • powdered sugar 4 cups powdered sugar
  • salt 1/8 teaspoon salt
  • shortening 1/4 cup shortening
  • unsweetened cocoa powder 1/3 cup unsweetened cocoa powder
  • vanilla 1 teaspoon vanilla

How to make it

  1. Sift together flour, sugar, baking powder, salt and cocoa powder.
  2. Mix melted butter, egg and vanilla.
  3. Pour buttermilk, peanut butter cups and butter mixture into dry ingredients.
  4. Mix until just combined. Do not overmix.Put batter into greased mini doughnut pan. I piped it into the pan using a pastry bag.
  5. Bake at 350 degrees for 6-8 minutes. Do not overbake.Beat butter, shortening and vanilla until creamy.
  6. Add powdered sugar, one cup at a time, beating at low speed until well blended.
  7. Add half-n-half and marshmallow cream, beat until light and fluffy.
