How to make it

  1. Drain the jar of ready-roasted peppers.
  2. Heat a griddle pan or grill to high. Thicklyslice the aubergines lengthways, brushwith a little oil, then griddle untilgolden and crisp on both sides.
  3. Heatoven to 150C/130C fan/gas
  4. On a large,lipped baking tray, layer up rows ofpeppers and aubergines.
  5. Drizzle witholive oil, sprinkle with the sliced garliccloves, some thyme leaves andseasoning, then bake for 30 mins.
  6. Servewarm, or at room temperature.
