  • baking soda 1 teaspoon baking soda
  • brown sugar 1 cup packed brown sugar
  • butter 3/4 cup butter, cubed
  • eggs 2 eggs, beaten
  • flour 3/4 cup all-purpose flour
  • rolled oats 2-1/2 cups rolled oats
  • salted peanuts 1/2 cup salted peanuts, coarsely chopped
  • vanilla extract 1 teaspoon vanilla extract

How to make it

  1. In a large skillet over medium heat, melt butter until lightly browned.
  2. Add oats, stirring constantly until golden, about 8-10 minutes.
  3. Remove from the heat; cool.
  4. Combine flour and baking soda; set aside. In a large bowl, beat brown sugar, eggs and vanilla until light. Stir in dry ingredients and peanuts until well blended.
  5. Let stand for 15 minutes. Drop by rounded teaspoonfuls onto greased baking sheets.
  6. Bake at 375° for 10 minutes or until golden.
  7. Remove to wire rack to cool.
