Ingredients

  • almond milk ¼ c. unsweetened, vanilla almond milk
  • apple butter ½ c. apple butter jam
  • baking soda ½ t. baking soda
  • coconut flour ½ c. coconut flour
  • coconut oil 2 T. coconut oil, softened
  • coconut sugar ½ c. coconut sugar
  • flour ½ c. ground walnuts or walnut flour
  • ground cinnamon ½ t. ground cinnamon
  • ground cloves ¼ t. ground cloves
  • ground ginger ¼ t. ground ginger
  • apple 1 small, honey crisp apple, roughly chopped
  • liquid egg whites ¾ c. liquid egg whites, or 4 large eggs
  • olive oil ¼ c. extra-virgin olive oil
  • stevia ½ c. granulated stevia
  • walnuts ¼ c. chopped walnuts

How to make it

  1. For the muffins, preheat the oven to 350 degrees F. Grease 9 muffins cups w/ cooking spray or line w/ paper liners and grease the liners w/ cooking spray.In a large mixing bowl, combine the flour, stevia, cinnamon, cloves, ginger, and baking soda.Stir in the eggs, evoo, almond milk, and apple butter.Fold in the chopped apple.Evenly distribute the batter between the prepared muffin cups.For the topping, in a small mixing bowl, combine all of the ingredients until combined and a crumbly topping begins to form.Sprinkle the topping over each one of the muffins.
  2. Bake for 30-35 minutes, or until the tops are slightly golden and a toothpick inserted into each muffin comes out clean.
  3. Let cool slightly then devour!
