Goat Cheese Fig Grilled Cheese

  • butter 6 tbsp butter
  • french bread 1 loaf french bread (cut into 12 slices)
  • fresh figs 2 cups fresh figs (chopped)
  • goat cheese 6 oz goat cheese
  • honey 1 tbsp honey
  • lemon zest 1 lemon (zested)

How to make it

  1. Add the figs to a small mixing bowl.
  2. Drizzle the honey on top then zest one lemon into the honey figs.Prepare the sandwiches by spreading 1/2 tbsp of butter on one side of each slice of bread then spread the other side with 1/2 tbsp of goat cheese.
  3. Add 1/4 cup of the fig mixture on top of half the slices of bread.
  4. Place in skillet over medium-high heat and cook for 2-3 minutes per side.
