• canned garbanzo beans 1 15-ounce can garbanzo beans, rinsed and drained
  • cayenne pepper pinch of cayenne pepper
  • chipotle pepper in adobo 1 teaspoon chopped chipotle pepper in adobo sauce (optional)
  • extra virgin olive oil 1/4 cup extra virgin olive oil
  • garlic 2 cloves garlic, chopped
  • juice of lemon juice of 1 lemon
  • kosher salt pinch of kosher salt
  • roasted red bell peppers 2-3 roasted red bell peppers, jarred or fresh
  • tahini 2 tablespoons tahini

How to make it

  1. Combine the garbanzo beans, tahini, extra virgin olive oil, lemon juice and garlic in the bowl of a food processor and process for 1 minute.
  2. Add the red bell peppers, chipotle pepper in adobo sauce, pinch of cayenne pepper and a pinch of kosher salt. Process for 1-2 more minutes or until smooth. Be sure to scrape the bottom of the processor and the sides so that all ingredients are well combined.
  3. Add more kosher salt and cayenne pepper to taste. If the hummus is too thick, add more olive oil 1 teaspoon at a time.
