Oven Baked Beef Tacos

Ingredients

  • canned black beans 1 (15-ounce) can black beans, rinsed and drained
  • canned tomatoes 1 (10-ounce) can Ro-tel diced tomatoes and green chiles, drained VERY well
  • ground beef 1 pound ground beef
  • lettuce Optional garnishes: shredded lettuce, sliced radishes, sliced jalapenos, sour cream, sliced black olives, salsa
  • shredded cheese 1½ cups shredded cheese (I used a 3-pepper blend)
  • taco seasoning Taco seasoning
  • taco shells 10 hard taco shells

How to make it

  1. Preheat oven to 375 degrees.
  2. Cook and season ground beef according to taco seasoning directions. Set aside.
  3. Arrange taco shells in a 9 x 13 casserole dish.
  4. Divide black beans, taco meat and tomatoes evenly among shells. Sprinkle with cheese.
  5. Bake for 7-10 minutes or until cheese is melted and tacos are heated through.
  6. Serve warm with optional garnishes.
