  • cake flour 2 Tbsp. cake flour
  • egg whites 2 egg whites
  • salt 1/4 tsp. salt
  • sugar 1/2 cup sugar
  • unsweetened shredded coconut 1 cup coconut, unsweetened, shredded, reduced fat
  • vanilla 1/2 tsp. vanilla

How to make it

  1. Preheat oven to 350 FLine a baking sheet with parchment paper
  2. In a bowl add egg whites, sugar and vanilla.
  3. Mix until combined.
  4. Add coconut to egg white mixture and stir until combined.
  5. Add cake flour and salt and mix until combined.Drop a tablespoon of batter onto cookie sheet, about 2" apart.
  6. Bake for 12
  7. 15 minutes until the bottom is lightly brown.
