Clean-out-the-fridge Beef Stew

  • beef top sirloin steak 1 pound good quality beef. I used a sirloin steak, cubed.
  • canned black beans 1 can black beans
  • canned corn 1 can corn
  • carrots Handful of carrots, diced
  • celery 2 stalks celery, diced
  • cumin seeds 1/2 Teaspoon cumin seeds, toasted if you want
  • fresh thyme 1 Teaspoon fresh thyme
  • garlic 3 cloves garlic, minced
  • jalapenos 2-3 jalapenos, diced
  • oil 2 Tablespoons oil, (canola or grapeseed works best)
  • onion 1 small onion, diced
  • paprika 1 Teaspoon paprika
  • red bell pepper 1 small red pepper, diced
  • red pepper flakes 1/2 Teaspoon red pepper flakes
  • red wine 1/2 cup red wine
  • salt and pepper Salt and pepper
  • water 2-3 cups water
  • garnishes: cheese Garnishes: Shredded cheese, Greek yogurt, sour cream, avocado, crackers

The whole idea of this stew is that you buy as few things as possible. The only things I bought just for this dish was the beef and the avocado.

How to make it

  1. Mince all your veggies to roughly the same size. If you're using jalapenos and/or garlic, you might want to mince them finer just so you don't get a big bite of one.
  2. Cube the beef and dust it lightly with flour.
  3. In a medium heavy pot, add a few tablespoons of neutral oil over high or medium-high heat. Once hot, add beef and brown well on all sides.
  4. Remove beef but leave any oil remaining.
  5. Add vegetables to pot and stir. Turn down heat slightly if veggies are burning. If the pan is dry, add a bit more oil. Cook for a minute or two until veggies are just starting to soften up.
  6. Add a pinch of salt.
  7. Add red wine and deglaze pan, scraping up browned bits from the beef with a spatula.
  8. Once deglazed, add beef back to pot and cover slightly with water. Bring to simmer, add spices, and simmer for 10-15 minutes until liquid is reduced and beef is tender.
  9. Add beans and corn if you're using them. Stir and simmer for a few more minutes.
  10. Serve immediately with garnishes.
