  • baking powder 1 Tablespoon baking powder
  • blueberries 1 1/4 cups fresh blueberries
  • butter 1/2 cup butter, softened
  • eggs 2 eggs
  • flour 2 cups flour
  • milk 1/4 cup milk
  • orange juice 3/4 cup orange juice + 4 teaspoons, divided
  • orange zest 1 Tablespoon orange zest
  • powdered sugar 3/4 cup powdered sugar
  • salt 1/2 teaspoon salt
  • sugar 3/4 cup sugar
  • vanilla extract 1 teaspoon vanilla extract

How to make it

  1. Beat the butter and sugar until creamy.
  2. Add the vanilla and eggs and beat again.Sift together the flour, baking powder, and salt.
  3. Add alternately with the milk and 3/4 cup orange juice until combined. Do not over mix.Stir in the blueberries and orange zest by hand. Spoon into 15 muffin liners.
  4. Bake at 350 degrees for 18-20 minutes.
  5. Remove and let cool.
  6. Whisk together the powdered sugar and 4 teaspoons orange juice. Dip the tops of the cooled muffins into the glaze.
  7. Let set. Store loosely covered in a container on the counter. Do not cover tightly as the glaze will soak into the muffins and make them sticky. Makes 15 muffins.
