  • all purpose flour 3/4 cup All Purpose Flour
  • unsweetened applesauce 1 1/2 cups Applesauce (I used unsweetened)
  • baking powder 2 teaspoons Baking Powder
  • baking soda 1 teaspoon Baking Soda
  • flax seeds 2 tablespoons Flax Seeds or Powder
  • granola 1 1/2 cups Granola
  • light brown sugar 1/4 cup Brown Sugar (I used light)
  • milk 1/2 cup Milk (any)
  • oats 1/4 cup Oats Flour
  • oil 2 tablespoons Oil
  • semi sweet chocolate chips 1/4 cup (optional) Semi sweet Chocolate Chips (mini)
  • walnuts 3/4 cup (optional) Chopped Walnuts
  • whole wheat flour 2/3 cup Whole Wheat Flour
  • yogurt 1/2 cup Yogurt/Buttermilk (instead of 2 eggs)

How to make it

  1. Preheat oven to 400F for 15 minutes. Grease the muffin tin or line it with paper liner. If using a paper liner, after lining grease the liner by spraying with a non stick spray so the muffins will come out of the paper easily.
  2. Combine the dry ingredients together in a big bowl. From granola to baking soda.In another medium size bowl, whisk together the applesauce, milk, brown sugar, oil and yogurt.
  3. Add the wet ingredients to the flour mixture and mix until just combined.Divide evenly into prepared muffin tin, approximately 3 tablespoons of batter per muffin or 3/4th of the tin. Sprinkle little granola/oats on top.
