  • almond milk 1/4 cup almond milk
  • unsweetened applesauce 1/4 cup unsweetened applesauce
  • banana 1/2 banana, sliced
  • brown rice syrup 1 teaspoon brown rice syrup [or maple syrup/stevia]
  • cinnamon 1/2 teaspoon cinnamon
  • rolled oats 1/2 cup rolled oats
  • salt pinch of salt
  • strawberries 3 strawberries, sliced
  • vanilla extract 1/4 teaspoon vanilla extract

How to make it

  1. Preheat oven to 375 degrees F.In a medium bowl combine all ingredients but the fruit together making sure to mix well.
  2. Add in the strawberries and mix them in. Spray a small ramekin or oven safe bowl with cooking spray and pour in half the oatmeal mixture.
  3. Add half the banana slices then top with remaining oatmeal and layer the last banana slices on top.
  4. Bake for 20-25 minutes or until oatmeal is bubbling and golden brown.
