Healthy Honey Flax Tahini Banana Bread

  • almond milk 1/3 cup unsweetened almond milk (or any kind of milk)
  • baking soda 1 teaspoon baking soda
  • bananas 3 extra ripe bananas, mashed (about 1 1/2 cups mashed banana)
  • black sesame seeds 2 tablespoons black sesame seeds
  • egg 1 egg, slightly beaten
  • flaxseed meal 1/2 cup flaxseed meal
  • ground cinnamon 1/2 teaspoon ground cinnamon
  • honey 1/4 cup honey
  • pastry flour 1 1/2 cups whole wheat pastry flour (or white whole wheat flour)
  • salt 1/2 teaspoon salt
  • tahini 1/3 cup tahini
  • vanilla extract 1 teaspoon vanilla extract

How to make it

  1. Preheat oven to 350 degrees F. Line a 8x4 inch loaf pan with parchment paper & spray with nonstick cooking spray. (This is important for easy removal of the bread!)In a large bowl combine the wet ingredients: mashed banana, honey, tahini, egg, vanilla, and almond milk until smooth.In a separate large bowl whisk together the dry ingredients: whole wheat pastry flour, flaxseed meal, sesame seeds, baking soda, cinnamon and salt.
  2. Add dry ingredients to wet ingredients and mix until just combined.
  3. Pour into prepared loaf pan and smooth top with a spatula.
  4. Place banana slices on top of the batter and sprinkle black sesame seeds on top for a beautiful effect.
  5. Bake for 55-65 minutes or until tester comes out clean or with just a few crumbs attached.
  6. Remove from oven and allow pan cool on a wire rack for 10 minutes, then remove bread and transfer to wire rack to cool completely. Bread is very good toasted and spread with extra tahini or any nut butter of choice.
