  • cilantro handful of cilantro, chopped
  • cumin 1/2 t cumin, onion & smoked paprika
  • garlic salt 1/4 t garlic powder & salt
  • honey 1 t honey
  • juice of lime 3 limes, juiced
  • mahi mahi 1 lb. Mahi Mahi or other firm fleshed fish (Tilapia, Orange Roughy, etc.)
  • mango 1 mango, peeled, cored and finely chopped
  • pickled jalapenos 2 T pickled jalapenos, finely chopped
  • pineapple 1/2 pineapple, peeled, cored and finely chopped
  • red bell pepper 1/2 red pepper, finely chopped
  • red onion 1/2 red onion, finely diced
  • romaine lettuce 1 head Romaine lettuce, chopped

How to make it

  1. For the rub, mix all the ingredients together in a small bowl.
  2. Place the fish on a plate and pat both sides dry with paper towels. Sprinkle the rub evenly on each piece, of each side of the fish. Rub in the mixture with your fingers. Grill or saute the fish, on high, for about 4 minutes on each side.For the salad, combine all the ingredients and stir to mix together.[/print_this]
