Mustard-crusted Salmon With Celeriac Mash

  • breadcrumbs 3 tbsp dried breadcrumbs
  • celeriac ½ celeriac, about 250g, cubed
  • dill 1 tbsp chopped dill
  • juice of orange juice ½ orange
  • light cream cheese 25g extra-light soft cheese
  • potatoes 250g potatoes, cubed
  • salmon 2 x 175g skinless salmon fillets
  • wholegrain mustard 2 tbsp wholegrain mustard

How to make it

  1. Heat oven to 220C/200C fan/gas 7.Boil the celeriac and potato for 15-20mins until tender.
  2. Mix the breadcrumbs, 1 tbsp orangejuice, the dill and 1½ tbsp mustard. Putthe fish on a foil-lined baking tray, drizzleover the rest of the juice and press thecrumb mix on top.
  3. Bake for 15 mins.
  4. Drain the veg, then mash in the panwith the cheese and remaining mustard.Season and serve with the salmon.
