  • baby spinach 1 cup baby spinach, finely chopped
  • dried thyme 2-3 sprigs of dried (or fresh) thyme
  • extra virgin olive oil 1 tablespoon extra virgin olive oil
  • goat cheese 1 ounce goat cheese
  • milk ΒΌ cup milk
  • Salt & Pepper salt & pepper
  • shallot 1 shallot, sliced
  • sweet potatoes 2 large sweet potatoes, peeled and chopped

How to make it

  1. Bring a large pot of water to a boil with sweet potatoes in it and cook for about 15 minutes until fork tender.
  2. Drain and set aside.While potatoes cook, saute shallots with olive oil in a medium pan over medium heat until softened and just starting the brown (about 5-7 minutes).
  3. Combine cooked potatoes, sauteed shallots, spinach, goat cheese, milk and thyme if using in a medium bowl.Mash together with a potato masher or fork until well combined.
  4. Add salt & pepper to taste and mash again.
  5. Serve warm.
