  • almond milk 6 Tbs Unsweetened Almond Milk (or light coconut milk)
  • brown rice 150g (5 cups) Crispy Brown Rice Cereal
  • brown rice syrup 168g (1/2 cup) Brown Rice Syrup
  • walnut 128g (1/2 cup) Raw Walnut Butter
  • dark chocolate 4oz Dark Chocolate (60-70% cacao)
  • flaxseed meal 13g (2 Tbs) Flaxseed Meal
  • old fashioned rolled oats 48g (1/2 cup) Old Fashioned Rolled Oats
  • salt 1/4 tsp Salt
  • stevia extract 3/4 tsp Stevia Extract
  • vanilla protein powder 62g (2 scoops) Vanilla Protein Powder

How to make it

  1. Line a brownie pan with parchment paper both ways, set aside.In a large mixing bowl, mix together the cereal, oats, flax and salt.In a large microwave-safe bowl, stir together the rice syrup, walnut butter, figs and stevia. Microwave at 30-second intervals, stirring in between each one, until mixture is runny/liquidy.
  2. Add the protein powder to the microwaved mixture, spoonful by spoonful, stirring between each one until incorporated.Scoop this mixture over the rice krispy mixture and fold until incorporated. Scoop this mixture into the brownie pan and flatten with the rubber spatula (or a pastry roller). Refrigerate while you make the chocolate ganache.In a clean microwave-safe bowl, chop up the chocolate and microwave at 30-second intervals, stirring between each one, until melted. Stir in the almond milk, one tablespoon at a time, then add the stevia.
  3. Spread over the krispy treats and refrigerate until slightly firm, then slice.
