  • low fat plain yogurt 1/3 cup plain low-fat yogurt
  • salt ½ teaspoon salt
  • sugar 1 cup sugar
  • vanilla bean paste ½ teaspoon vanilla bean paste
  • vanilla extract 1½ teaspoons vanilla extract

How to make it

  1. Preheat oven to 350F.
  2. Whisk together the flour, baking soda, salt, and cinnamon in a medium bowl.
  3. Place the sugar and butter in a large bowl, and beat with a mixer at medium speed until well blended (about 1 minute).
  4. Add the eggs, 1 at a time, beating well after each addition.
  5. Add the banana, yogurt, vanilla extract, vanilla bean paste, and almond extract; beat until blended.
  6. Add the flour mixture; beat at low speed just until moist.Spoon batter into an 8 x 4-inch loaf pan coated with cooking spray.
  7. Bake for 1 hour or until a wooden pick inserted in center comes out clean.Cool 10 minutes in pan on a wire rack; remove from the pan and cool completely on a wire rack.
