Broccoli Slaw

  • apple 1 medium sweet apple, cut into bite size pieces
  • bacon 4 - 6 pieces cooked bacon, crumbled
  • balsamic vinaigrette ¼ cup balsamic vinaigrette (use a gluten-free dressing to make this salad Gluten-Free.)
  • broccoli 4 broccoli stems, peeled and julienned (approximately 3 cups)
  • cabbage 1 cup shredded cabbage
  • carrot ½ cup matchstick carrot slices
  • celery 2 sticks celery, thinly sliced
  • dried cranberries ¼ cup dried cranberries
  • mayonnaise 1 cup mayonnaise
  • pecans ½ cup diced pecans, cashews, or almonds
  • red onion ½ cup diced red onion
  • sugar ¼ cup sugar, honey, or agave

How to make it

  1. If you don't have cooked bacon, cook the bacon. The drain the fat and crumble the bacon into small pieces.
  2. Place all of the salad ingredients in a large bowl.
  3. Add the bacon to the salad.
  4. Mix well.
  5. Add all the dressing ingredients to a small bowl.
  6. Mix together until well blended.
  7. Pour the dressing over the salad. Stir well to coat the salad with the dressing.Refrigerate the broccoli slaw for at least 2 hours.
  8. Serve cold.
