  • cornmeal 1 c. cornmeal
  • eggs 2 eggs, beaten
  • flour 3 c. all-purpose flour
  • honey 11/3 c. Tate+Lyle Honey Granules
  • pumpkin ⅔ cup pureed pumpkin
  • salt 1 teaspoon salt
  • unsalted butter ¼ cup. melted unsalted butter
  • whole milk 2½ cups whole milk

How to make it

  1. Preheat oven to 400 degrees and grease a 12 cup muffin tin.In a large mixing bowl, stir the cornmeal, flour, Tate+Lyle Honey Granules, baking powder and salt.In a separate bowl, mix together the pureed pumpkin, melted butter, beaten eggs and milk.
  2. Pour the wet ingredients into the dry ingredients stirring just until moistened.
  3. Pour the batter into the greased muffin tin filling each about full.
  4. Bake at 400 degrees for 15 minutes or until golden.
  5. Remove from oven, serve warm with butter or honey or simply plain.
