Super Bowl Turkey Chili

  • beer 1 1/2 cups beer
  • bell peppers 2 large bell peppers, diced
  • canned black beans 1 (15-ounce) can black beans, drained and rinsed
  • canned cannellini beans 1 (15-ounce) can cannellini beans, drained and rinsed
  • canned red kidney beans 1 (15-ounce) can red kidney beans, drained and rinsed
  • carrots 3 carrots, diced
  • chili powder 1 teaspoon chili powder
  • cumin 1 1/2 teaspoon cumin
  • fire roasted tomatoes 2 (14.5-ounce) cans diced fire roasted tomatoes
  • garlic 5 cloves garlic, minced
  • ground turkey 1 pound ground turkey
  • kosher salt Kosher salt and freshly ground black pepper, to taste
  • mushrooms 10 ounces mushrooms, thinly sliced
  • olive oil 2 tablespoons olive oil
  • oregano 1 teaspoon oregano
  • yellow onion 1 yellow onion, diced

How to make it

  1. Heat olive oil in a Dutch oven or large pot over medium high heat.
  2. Add garlic, bell peppers, onion, carrots, and mushrooms. Cook, stirring frequently, until carrots begin to soften, about 8-10 minutes. Stir in cumin, chili powder and oregano; season with salt and pepper, to taste.
  3. Add ground turkey and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks. Stir in beer and reduce heat to low; simmer, covered, until slightly thickened, about 15 minutes. Stir in tomatoes and beans and simmer until thickened, an additional 15-20 minutes.
  4. Serve immediately.
