  • cooked quinoa 2 cups cooked quinoa
  • kale 2 cups kale finely chopped
  • carrot 1 cup carrot julienned
  • pistachios 1/2 cup pistachios chopped
  • scallions 1/2 cup scallions finely sliced
  • cilantro 1/2 cup cilantro finely chopped
  • medjool dates 4 Medjool dates pitted & chopped
  • olive oil 3 tablespoons olive oil
  • juice of lemon Juice of 1 lemon about 2 tablespoons
  • orange juice 1 tablespoon orange juice optional for sweetness
  • apple cider vinegar 1 tablespoon apple cider vinegar
  • lemon zest Zest of 1 lemon about 1 tablespoon
  • turmeric powder 1 teaspoon turmeric powder
  • cumin 1/2 teaspoon cumin
  • coriander 1/2 teaspoon coriander
  • cayenne pepper 1/4 teaspoon cayenne pepper
  • cinnamon Pinch of cinnamon optional
  • Salt & Pepper Salt & pepper to taste

How to make it

  1. In a large bowl, combine all the salad ingredients.
  2. Add the dressing ingredients to a mason jar and shake to combine. You can also use a bowl and whisk them together until combined.
  3. Pour dressing over the salad and toss until everything is evenly coated.Allow salad it sit for 15 minutes before serving (this helps the kale soften a bit). Enjoy as is or serve with your favorite protein!
