Chocolate Chip Granola With Strawberries

  • brown sugar 3 tablespoons brown sugar
  • coconut oil 3 tablespoons canola or coconut oil
  • ground cardamom 1 teaspoon ground cardamom
  • ground cinnamon 1 teaspoon ground cinnamon
  • ground flaxseed 2 tablespoons ground flaxseed
  • honey 3 tablespoons honey
  • rolled oats 3 cups rolled oats
  • salt 1/4 teaspoon salt
  • semisweet chocolate chips 1/2 cup mini semisweet chocolate chips
  • strawberries 1 ounce bag dehydrated strawberries
  • unsweetened coconut 1 cup flaked unsweetened coconut
  • vanilla extract 1 tablespoon pure vanilla extract
  • wheat germ 2 tablespoons wheat germ

How to make it

  1. Preheat oven to 300F. Spray a sheet pan (rimmed baking sheet) with nonstick cooking spray.
  2. In a large mixing bowl, combine oats, coconut, flaxseed, wheat germ, cinnamon, cardamom and salt. Stir to combine.
  3. In a 2 cup microwave-safe measuring cup (or small bowl), add oil, honey, brown sugar, and vanilla.
  4. Heat in microwave for 45 seconds on 50% power. Stir to combine. If using coconut oil, continue to heat in 30 second increments until coconut oil is completely melted.
  5. Pour over dry ingredients and stir until everything is coated.
  6. Spread into an even layer on prepared baking sheet.
  7. Place in preheated oven and bake for 15 minutes.
  8. Remove from oven, stir, and continue to bake for 15-20 minutes or until golden brown. If you like big chunks, press down with spatula and let cool completely on pan. If you prefer not to have large chunks, stir 3-4 times as granola cools.
  9. Stir in strawberries and chocolate once completely cooled. Store in airtight container.
