  • carrots 2 carrots - grated
  • chili paste 1 Tbs chili garlic paste -optional
  • cucumber 1 c seedless cucumber - thinly sliced
  • fish sauce 2 Tbs fish sauce
  • fresh basil ¼ c fresh basil - minced
  • fresh mint ¼ c fresh mint - minced
  • juice of lime Juice of 1 lime
  • rice vinegar 1 Tbs rice vinegar
  • salt and pepper Salt and pepper to taste
  • shrimp 8 oz cooked ready-to-eat shrimp - sliced in half horizontally
  • sugar 1 Tbs sugar
  • water 1 Tbs water

How to make it

  1. Place shrimp, cucumber, carrots, mint and basil in a medium bowl.
  2. Whisk together dressing in a small bowl then pour on top of the shrimp salad. Toss well to combine. Adjust for seasoning if needed.
