Honey-mustard Steamed Green Medley

  • broccoli 140g thin-stemmed broccoli, cut into smaller pieces
  • cider vinegar 1 tbsp cider vinegar
  • fresh peas 200g fresh or frozen peas
  • green beans 400g green beans, trimmed
  • honey ½ tsp honey
  • leeks 2 leeks, trimmed and sliced into chunky rings
  • olive oil 4 tbsp extra-virgin olive oil
  • wholegrain mustard 1 tsp wholegrain mustard

How to make it

  1. Bring a large pan of water to the boil.
  2. Whisk the oil with the mustard, honeyand vinegar in a large bowl and season.
  3. Put the leeks in the water, bring backto the boil, then simmer gently for 1 min.
  4. Add the beans and cook for 2 mins, thenadd the broccoli and simmer everythingfor 4 mins. Finally, add the peas, bringback to the boil and simmer for 1 minmore.
  5. Drain really well, then tip into thelarge bowl and toss through the dressing.
  6. Serve straight away.
