  • baking soda ¾ teaspoon baking soda
  • butter ¼ stick of butter, room temperature
  • egg 1 egg
  • milk ¼ cup milk
  • orange juice 2 tablespoons fresh orange juice
  • orange zest 1 tablespoon orange zest
  • pecans ½ cup toasted pecans, chopped
  • pineapple 1 cup diced pineapple
  • salt ¼ teaspoon salt
  • sugar ½ cup confectionary sugar
  • unsweetened applesauce ½ cup unsweetened applesauce
  • vanilla extract 1 teaspoon vanilla extract
  • whole wheat pastry flour 1 cup whole wheat pastry flour

How to make it

  1. Preheat oven to 350 degrees and grease a muffin tin or lin with paper cups
  2. Combine flours, salt, baking powder and baking soda together in large bowl.In a medium bowl cream sugar and butter together with handheld mixer (or stand mixer) until fluffy.
  3. Add in egg and beat until combined.
  4. Add applesauce, yogurt, orange zest, vanilla and milk and beat lightly just to combine.
  5. Pour wet ingredients into dry and mix together.Fold in pineapple and pecans.Spoon mixture evenly into muffin tins and bake for 20-25 minutes until golden brown on the edges and completely cooked in the middle.While muffins cool on a rack, whisk together glaze ingredients.
  6. Drizzle on top of muffins before serving.
