  • almond milk 1 cup almond milk
  • baking powder 1 tablespoon baking powder
  • blueberries 2 cups blueberries, fresh or frozen
  • butter 2 tablespoons butter, melted
  • egg 1 large egg
  • egg whites 1 large egg whites
  • fresh thyme 2 tablespoons fresh thyme, finely chopped
  • juice of lemon 1 small lemon juice, juiced
  • sugar ¾ cup sugar
  • whole wheat pastry flour 2 ¼ cups whole wheat pastry flour

How to make it

  1. Preheat the oven to 350 degrees. Spray a bread pan generously with cooking spray and dust with flour. (I used a medium sized baking dish for fun.)
  2. Combine eggs, almond milk, sugar, butter and lemon juice in a large bowl.
  3. Combine flour and baking powder in another bowl and then gently fold flour mixture into egg mixture until combined.Fold in blueberries and thyme.
  4. Pour into the baking dish and bake for 50
  5. 60 minutes until a toothpick inserted in the center comes out clean.
