  • quinoa 1 cup Bob's Red Mill Red Quinoa
  • mango 1 cup mango chopped
  • edamame 1 cup shelled edamame
  • green onion 2 stalks green onion chopped
  • red bell pepper 1/2 cup red bell pepper chopped
  • unsweetened coconut 1/2 cup unsweetened flaked coconut
  • raisins 1/4 cup raisins
  • almonds 1/3 cup almonds roasted and chopped
  • fresh basil 6 leaves fresh basil chopped
  • sea salt sea salt to taste

How to make it

  1. Prepare quinoa according to package instructions. Allow quinoa to cool completely.
  2. Add all ingredients for the quinoa salad to a mixing bowl and toss to combine. Sprinkle in sea salt to taste. Taste the salad for flavor and if desired, add some olive oil and lemon juice to boost the flavor.
  3. Serve alongside your favorite main entree or add to a green salad.
